Muesli bars Norbu

These banana muesli bars use a natural sweetener derived from Monk fruit, and taste delicious.  There is no flour and no sugar, amazing! You can make them sugar free and wheat or gluten free depending on which muesli you use.

Ingredients

2 ripe bananas
2 Ttbls peanut butter, or other nut butter or seed butter
1 egg
1 tsp vanilla
2 Tbls “Norbu” sweetener
Norbu31/2 cups natural muesli*
1 tsp allspice

method

  1. Pre heat oven to 180 deg C/ Line the base of a slice tray with baking paper and spray sides with oil
  2. Blend bananas, peanut butter, egg, vanilla and Norbu with a stick blender
  3. Place muesli and allspice in a medium size bowl and stir through wet ingredients. Stand for a few minutes. Stir again and pour into prepared tray
  4. Cover with a piece of baking paper and smooth the top by rolling a small glass over the surface. Bake for 20 minutes or until golden
  5. remove from oven, and score top of the slice to make 24 pieces. Cool for a few minutes before cutting into slices
