choc cookies

Warning! These are so rich and scrummy, it is hard to stop at just one.

These would make a lovely treat or present for the gluten free loved on in your life. Also great for a kid’s birthday party.

Ingredients

125gm butter
200gm good quality gluten free dark chocolate
1 cup brown sugar
1 tsp vanilla
11/2 cups gluten- free flour
1/2 cup unsweetened cocoa or raw cacao
extra 100gms chopped chocolate
1/2 cup hazelnuts roughly chopped, optional

Method

  1. Pre-heat oven to 180 deg C. Line 2 oven trays with baking paper.
  2. Put butter and dark chocolate in a small saucepan over medium heat. Stir until melted and smooth. Transfer to a large bowl.
  3. Add sugar, egg and vanilla to chocolate mixture and stir to combine. Sift flour and cocoa over mixture and stir until well combined.
  4. Add extra dark chocolate and hazelnuts if using
  5. Using a dessert spoon*, spoon mixture into rounded blobs on the baking tray (the mixture should be a wet consistency like a brownie mix that holds it’s shape) allowing room to spread.
  6. Bake for 10 minutes or until tops of biscuits feel firm
  7. Stand on trays for 5 minutes then transfer to a wire rack to cool completely
  8. Store in an airtight container
  9. * This makes a small cookie. You can use a tablespoon to make larger ones, but they are pretty rich!
