This is my go to recipe for kids birthday cakes, or cupcakes.
Ingredients
- 200gms (11/3 cup) gluten-free SR flour
- 165gm (3/4cup) castor sugar
- 150gm butter
- 60ml milk or almond milk
- 3 eggs
- 1 tsp vanilla extract
Method
- Preheat oven to 180 deg C (160 deg fan forced)
- Grease a 20cm cake tin and line base with baking paper
- Cream ghee (butter) and sugar together
- Add eggs one at a time until just mixed
- Stir in 1/2 of sifted flour
- Add the milk
- Stir in the remaining flour and mix well
- Spoon into the baking tin and smooth the surface
- Bake for 35-40 minutes or until a skewer comes out clean
