This is my go to recipe for kids birthday cakes, or cupcakes.


  • 200gms (11/3 cup) gluten-free SR flour
  • 165gm (3/4cup)¬† castor sugar
  • 150gm butter
  • 60ml milk or almond milk
  • 3 eggs
  • 1 tsp vanilla extract


  1. Preheat oven to 180 deg C (160 deg fan forced)
  2. Grease a 20cm cake tin and line base with baking paper
  3. Cream ghee (butter) and sugar together
  4. Add eggs one at a time until just mixed
  5. Stir  in 1/2 of sifted flour
  6. Add the milk
  7. Stir in the remaining flour and mix well
  8. Spoon into the baking tin and smooth the surface
  9. Bake for 35-40 minutes or until a skewer comes out clean
