So yummy, and healthy too! It Only take minutes to whip up a batch!
Ingredients
- 100gms walnuts or cashews
- 100gms almonds
- 2 Tbls of linseed, sunflower seeds or pumpkin seeds
- 170gms fresh dates pitted
- 100gms dried figs
- 100gms prunes
- 1 Tbls tahini or peanut butter or almond butter
- 2 Tbls raw cacao powder
- 1 tsp cinnamon (optional)
- 2 tbls honey or rice malt syrup
- 100gms of desiccated coconut
Method
- Combine nuts and seeds in a food processor and blitz until you have fine crumbs (meal)
- Add the different fruits and combine until smooth
- Add the tahini, cacao, cinnamon, honey and a pinch of sea salt and process until the mixture forms a ball
- pinch off golf ball size pieces of mixture and roll into balls. (it helps to have slightly wet hands)
- Roll each ball in coconut to finish
Store in an airtight container in the fridge
