Ingredients
- 500gms organic chicken mince
- 1/4 cup fresh oregano, or 1 tsp dried
- 1/2 brown onion, cut into small dice
- 1 clove of garlic, finely chopped
- I egg
- 1/2 cup gluten free breadcrumbs (make these from gluen free bread by whizzing in food processor, or use store bought, I like liefstyle bakery gf crumbs)
- olive oil or coconut oil for cooking
Method
- In a bowl combine chicken mince, chopped onion, garlic, oregano, egg, breadcrumbs and season with salt and pepper
- Get your hands un there and really squish the mixture together( this makes it hold together when cooking)
- Roll balls of mixture between slightly wet hands and then flatten each one
- heat oil in a pan over medium heat
- Cook a few rissoles at a time until nicely browned and cooked through.
Serve as a burger in a roll with relish and salad of your choice or serve with mash and vegies make smaller balls for an easy finger food or snack
