choc pudding

Who doesn’t love chocolate pud! This one is Gluten and dairy free – Hooray!


  • 1/2 cup gluten-free flour
  • 1/2 cup almond meal
  • 2 teaspoons of baking powder
  • 25gms cocoa or cacao powder
  • pinch of salt
  • 100gms of brown sugar
  • 2 eggs
  • one tbls of almond milk or other milk

For the sauce

  • 100gms brown sugar
  • 25gms cocoa or raw cacao powder
  • 300mls hot water


Make cake batter first

  1. Mix dry ingredients together
  2. Mix wet ingredients together
  3. Combine dry and wet ingredients and stir together.
  4. Spoon into 11/2cup capacity greased casserole dish and roughly smooth the surface (don’t be too fussy)

To make sauce

  1. Blend all the ingredients together
  2. Pour the sauce onto the back of a spoon and allow it to fall overĀ  and cover the raw cake mixture
  3. Bake the pudding for 30-40 minutes or until a skewer comes out clean
  4. Serve pudding warm with some fresh berries
