Who doesn’t love chocolate pud! This one is Gluten and dairy free – Hooray!
Ingredients
- 1/2 cup gluten-free flour
- 1/2 cup almond meal
- 2 teaspoons of baking powder
- 25gms cocoa or cacao powder
- pinch of salt
- 100gms of brown sugar
- 2 eggs
- one tbls of almond milk or other milk
For the sauce
- 100gms brown sugar
- 25gms cocoa or raw cacao powder
- 300mls hot water
Method
Make cake batter first
- Mix dry ingredients together
- Mix wet ingredients together
- Combine dry and wet ingredients and stir together.
- Spoon into 11/2cup capacity greased casserole dish and roughly smooth the surface (don’t be too fussy)
To make sauce
- Blend all the ingredients together
- Pour the sauce onto the back of a spoon and allow it to fall overĀ and cover the raw cake mixture
- Bake the pudding for 30-40 minutes or until a skewer comes out clean
- Serve pudding warm with some fresh berries
